Vegan Stuffed Bell Peppers


Hi everyone! So Monday was my anniversary 💕😊 🤵🏾and I decided to make something new for dinner to celebrate the occasion😊.  I decided on Stuffed Bell Peppers! Sounds good right!  So growing up in New Orleans food was a big part of my life! Thats when all the family would get together and eat and laugh and dance.. but since I’ve moved away I really missed that! I missed my daddy’s yummy creole/Cajun spices! Anyways it made me think of my dads stuffed bell peppers which was my favorite as a kid! Well that and Mac and a cheese… Anyways.. He had the peppers stuffed with shrimp, crawfish, crab meat, dirty rice and sausage… 😋 but of course none of that is vegan 🙄 so I decided to try a different approach. I went to my nearest Market and purchased a bag of organic butternut squash pre-cut 🤫, jasmine rice(my fav), green onions, garlic, rotel, avocados and of course the yummy bell peppers and of course teriyaki sauce to tie it all in together. I decided on the yellow, red, and orange bell peppers I feel that they are more tasty! The green ones are good but a bit bitter in my opinion.  Anyways Let me tell you!!  this is my new favorite meal! I paired it with a side of lemon kale salad with dried cranberries. My fiancé loved it! So Yes!! He can be a picky eater so I was super excited about that! Everything blended so well and the flavor was on point! This is definitely a recipe to try! Vegan Nachos Recipe



1 bag of your fave vegan chips – I love On the border Cantina Chips!
Jalepenos  fresh or jarred
1 medium tomato or Picante Salsa
2 stems of Green  onions, chopped

Desired amount of Guacamole

Refried Black beans

Place the chips on a plate, add the black refried beans and top with brown rice! Stack as you wish 😊

Top with fresh Guacamole and salsa

Serve Hot



Na-cho average Nachos 😆

So it’s Friday Eve and im getting ready to prepare dinner. Yes it’s a little late but my commute today was longer than normal.. here in Texas when it rains people freak out .. the 70 speed limit quickly turns into 20 🙄 😤

Anyways  I will be making Vegan Nachos! I have guacamole, refried beans, brown rice, jalapeños and my picante salsa! What I love about making nachos is that it’s super easy to make and super delicious! Who doesn’t love a nice plate of nachos right?! This meal is perfect for the days where you just don’t feel like cooking or simply as a great appetizer. Try them with a side of the yummy cauliflower buffalo wing recipe I posted last week for some extra excitement! If you really want to be fancy get your favorite corn tortillas from your nearest market cut them into triangles and pop them in the oven at about 450 for about 5-7 minutes or untill desired crispiness! You can even add homemade Pico and cilantro as toppings for extra flava! I’ll be uploading the recipe tonight so that you can give the vegan style nachos a try if you haven’t already. I promise you will love them!

Vegan Cajun fried “Chicken”


Spicy Fried Cauliflower “Chicken”

Prep time 10 mins
Cook time 20 mins
Total time 30 mins

This spicy fried cauliflower recipe is delicious!
Serves: 4
1 cup all purpose flour
1 tablespoon arrowroot powder or cornstarch
½ teaspoon salt
½ teaspoon cayenne pepper
½ teaspoon white pepper
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon sweet or smoked paprika
¼ teaspoon Old Bay seasoning
1 tablespoon nutritional yeast
⅓ cup hot sauce
¼ cup unsweetened plain soy milk or other non-dairy milk
1 tablespoon Dijon mustard
5 cups safflower oil, or other frying oil
1 large head of cauliflower, cut into large florets
In a medium-sized mixing bowl combine the flour, arrowroot powder, salt, cayenne pepper, white pepper, onion powder, garlic powder, paprika, Old Bay, and nutritional yeast.
In another bowl combine the hot sauce, soy milk, and Dijon mustard and whisk until creamy.
Heat the frying oil in a large dutch oven or fryer. It should be around 350°.
Use one hand to carefully dip a cauliflower floret into the wet mixture, then drop it into the flour mixture. Use your other hand (it should be dry) to coat it completely. Dip it back into the hot sauce mixture, and again into the dry mixture, keeping one hand devoted to wet and one to dry.
Carefully lower the twice coated cauliflower into the hot oil. Repeat with remaining cauliflower until you can’t fit any more into the pot. Cook for about 4-5 minutes, until the pieces are golden.
Transfer fried cauliflower to a large plate covered with two sheets of paper towel to absorb excess oil.
Continue to cook the remaining cauliflower.

Serve hot.



Baked Cauliflower “Wings” Recipe

Baked Buffalo Cauliflower wings
Prep time: 10 mins

Cook time: 30 mins

Total time: 40 mins

Serves: 4
💡 Don’t forget to coat your cookie sheet well with oil or they will stick.

1 head of cauliflower (approx. 4 cups of florets)

½ cup of almond or soy milk

1/4 cup of water

¾ cup all-purpose flour (can sub gluten-free rice flour)

2 tsp garlic powder

1 tsp cumin

1 tsp of paprika

¼ tsp salt

¼ tsp ground pepper

1 cup Frank’s red hot sauce

1 tbsp Earth balance buttery spread


Line baking sheet(s) with parchment paper or grease very well with oil. Preheat your oven to 425-450 F depending on your oven.

Wash and cut cauliflower head into bite-sized pieces/florets.

Mix the milk/water/flour and spices in a medium mixing bowl (set aside the hot sauce and butter for later).

Mix until the batter is thick and is able to coat the cauliflower without dripping.

Dip the cauliflower in the batter. You can do this one by one or in batches. shake off excess batter before placing cauliflower on the baking sheet.

Lay the cauliflower single layer on the baking sheet.
Bake for 20 minutes until golden brown, flipping the florets over halfway through to get all sides golden brown and crispy.

While the cauliflower is baking, get your buffalo wing sauce ready. In a small saucepan on low heat melt butter and mix in hot sauce. Remove from the heat just as it starts to melt. Stir together and set aside.

Once the cauliflower is done its first bake in the batter, remove them from the oven and put all the baked florets into a mixing bowl with the wing sauce and toss to coat evenly.

Return cauliflower to the baking sheet and bake in the oven for another 10-15 minutes or until reached desired crispness.


Serve with your favorite vegan dipping sauce.

Sage Bistro and Brewery Cauliflower “Wings”

28A84411-21CF-47FA-97DB-DB80E2F31AF0 I couldn’t wait to share this with you! I tried a new recipe and I’m totally in love with it! So..Pre-Vegan I would order wings almost everywhere I went so this was a very exciting recipe for me to make and honestly I really felt like I was eating “chicken wings”! I got the idea from this really awesome restaurant in Echo Park (Downtown LA )called Sage Bistro and Brewery.. I highly recommend this restaurant to anyone and everyone! 10 thumbs 👍 for me!! My Fiancé loved it too!! Everything on the menu is 100% Vegan! The food was absolutely delicious!  I ordered the buffalo cauliflower “wings” and a Mexican Style Pizza. YES! Vegans can eat pizza too! It was a Mexican style pizza with Spicy black bean purée, Tempeh “sausage”, corn and habanero cheese 😋 😋!  I was in Vegan heaven! Inspired.. Meat is the only way to get it”  I hear it all the time!! I simply respond I’m vegan because I choose to be. It’s as simple as that! I think its really important for people to realize that.  If you want to eat a Triple Decker Hamburger with extra cheese and a side of BBQ Ribs that’s your choice, its your life. I’m not here to judge others and how they live their lives. I’m only here to live my own and i’m choosing to live it as healthy as I possibly can.
