Hello again! I’m back with another recipe! I’ll be showing you how to make this delicious vegan power bowl! It has so much flavor and as always super easy to make! So lets begin!
1 cup of Spinach Leaves per serving
1 cup of Mushrooms
Boxed Brown Red Wild Quinoa Multi-Grain Medley by minute rice
1 Can of Goya Black Beans
Avocados for fresh Guacamole
Bring water to a boil for the quinoa rice per package instructions
In a small saucepan add the black beans and season to taste
Place your frozen corn into a small skillet on low season to taste
Chop up your mushrooms, onions, tomatoes and spinach leaves.
Add the Minute Brown Red Wild Quinoa Multi-Grain Medley to the boiled water. It cooks in 10 minutes
Next, peel and chop your avocados and smash to your desired texture. Add in some of the chopped onions and mix well sit to the side. We will use this later.
Remove rice from the boil
Now it’s time to layer our bowls!
Grab the chopped veggies from earlier and place your desired amount of chopped spinach leaves to the bottom of bowl. Next, scoop some of the Quinoa Rice and black beans. Top the black beans with a layer of sweet corn and add a desired amount of mushrooms, remaining red onions, and tomatoes. Lastly, top with desired amount of the fresh Homemade guacamole and a dollop of the Picante Salsa! And Serve!

Hello! So this was a not so healthy recipe that I made a few days ago.. I was craving something deep fried and crunchy and this recipe was just that! This was soo tasty and like everything I make it was super easy to make! Let’s begin!
1 Head of Cauliflower
Oil of your choice for frying
1 tablespoon of sugar
1 bag of seasoned Louisiana Fish Fry
Pour your oil into a deep pot if you have a deep fryer even better!
Cut your cauliflower into nugget size pieces or your desired size and season to taste. I used Tony’s, lemon pepper, and some New Orleans creole seasoning.
In a small mixing bowl, add about 3-4 big squirts of mustard and add the tablespoon of sugar. Mix well.
Coat your seasoned cauliflower with the mustard mixture and sat to the side.
In another mixing bowl or preferably a brown paper bag, add Louisiana seasoned Fish fry.
Add your cauliflower nuggets a few pieces at a time and shake to coat.
Drop the coated cauliflower into the oil and fry untill golden brown
Place the cauliflower on a bed of napkins to remove access oil and serve!
Hello everyone! I’m back with another yummy recipe! Vegan pizza!! Who doesn’t love pizza right?! So this recipe was super simple and super quick! Let’s begin!
NOTE: Because this is a quick pizza recipe we will be using store bought pizza crust. Also, I didn’t include Vegan Cheese in this recipe adjust recipe to your liking.
Great Value pizza crust- Original or Homemade (if you have more time)
Prego pizza sauce
Pre-Heat your oven to 450
Chop your veggies to your liking, add to a skillet and sauté with olive oil for 1 minute. Hold off on the spinach leaves, olives, and the banana peppers for now. You will add those later.
In a small saucepan add about 1 cup of Prego pizzeria sauce. Season with basil, and Italian seasoning to your liking.
Place your crust on a pizza pan and lightly rub about a cap full of olive oil over your pizza crust.
Take a spoon and add your pizza sauce using the back side of the spoon. Completely cover your crust with 1-2 layers of sauce.
Next, add the sautéed veggies to your pie. You may now include the Chopped spinach leaves, olives, and banana peppers.
Once your pizza is topped, Sprinkle the top with Italian seasoning to your liking.
Cook in oven on 450 for 8-10 minutes
Remove from oven. Add Red Pepper Flakes and black pepper to taste.
Serve Warm Enjoy!
Hello everyone it’s been a while since I posted but I’m back and ready to share a new recipe with you Vegan Alkaline stuffed peppers. If you’re not familiar with Alkaline foods it’s basically an alkaline/electric plant-based lifestyle that is based on the methodology and protocols of the late Dr. Sebi. This includes the consumption of natural whole plant foods that creates the least amount of mucus in the body, including vegetables, fruits, whole grains, legumes, nuts and seeds. Every item used in my stuffed bell peppers recipe is completely vegan and 100% Alkaline. It contains 100% organic Mushrooms, olives, Wild Rice, Tomatoes, onions, and Avocados. This delicious meal was so easy to make.
Boil a pot of (Alkaline) water if no alkaline water filtered is fine
Prepare your bell peppers of your choice by rinsing and slicing off the top and cleaning out all of the seeds by rinsing with water
Add the bell peppers to the water and boil for 5 minutes or untill soft
While the peppers are boiling prepare your wild rice either stove top or by using rice cooker.
Chop up up your mushrooms, onions, olives, Avocados, and tomatoes
Add veggies to Wild Rice
Mix veggies into the wild rice and add season to taste
Remove bell peppers from boil and place on a oiled baking pan
Stuff the rice mixture into the peppers and bake for 15 minutes at 350 degrees
Serve Warm Enjoy 😊
Hello everyone!! Today I want to talk about plating your meals vegan style.. It’s so important that you eat lots of nutritional veggies, legumes, nuts and seeds, whole grains, and lots of fruits if you decide to switch to a plant based lifestyle. It’s so important to include as much of the foods above in your meals. I’ve met a few girls including myself ..who started this diet and were only eating once a day or eating really tiny servings. Did you know that 1 pound of kale is only 223 calories!! Yes I said that right! And 1 pound of broccoli is only 153 calories!! So don’t be afraid to load up the plate with your veggies and fruits. One of the best part about being vegan is that you can be very generous with your portion size without feeling guilty.. and even after a heavy meal of veggies I don’t feel heavy at all… If that make a sense😶.. your body just feels better.. I’m telling you it’s amazing! Check out the example plate above and use it as a guide when preparing your meals 😊.

Hello everyone thought I would share with you a 30 minute recipe for a quick lunch or dinner. You only need a few ingredients and with the help of my rice cooker only 2 non stick skillets. So, I used a can of Goya black beans rinsed, Jasmine white rice, Fresh Jalepenos, onions, fresh cilantro, bell peppers, diced tomatoes and guacamole. I first placed my jasmine rice in the rice cooker on the quick rice setting, while that was cooking I chopped my veggies and placed my canned black beans in a strainer and rinsed untill clean. Once the rice finished, I scooped the rice in my skillet with the rinsed black beans, chopped veggies, diced tomatoes, and guacamole and I sautéed it altogether with some taco seasoning and lemon pepper for spices and I placed my stove on warm. In another small skillet I lightly sprayed it with olive oil and placed my corn tortillas. I fried untill crispy and golden on both sides which took about 1 minute on high heat. I added my fresh cilantro, jalepenos, and picante sauce for my toppings and voila! Lunch was served 😋. This was so easy, vegan 🌱 and omg so delicious! Let me know what you think!

So…I started my vegan journey on Christmas Day 2017. I watched this documentary called “What the Health “ and it changed my life! It totally opened my 👀. I weighed 155 lbs at that time.. 😳 i Just weighed in for the first time in a while and my scale read 134.2! I couldn’t believe it! I got on and off.. moved it around the house .. the numbers remained the same. I did that until I finally convinced myself that it was true! That’s like a 20 lb difference! I rarely worked out during that time.. only clean vegan eating. I actually just started my workout routine last week which consists of Pilates, strength training, and cardio. I will be posting within the next couple of days and I’m excited to see what the scale will say next! I feel great, and energized .. my clothes .. well they are falling off of me but no complaints there 😄 it just means Im getting that much closer to my goal weight of 125. I’m so excited to go shopping for my new body. I’m really enjoying my new vegan lifestyle. Honestly when I started this I didn’t know how long it would last.. Growing up in New Orleans.. having like 3 different types of meat in 1 meal was almost a daily occurrence. So I’m so proud of myself that I made it this far! I don’t see myself going back now! My life has seriously changed for the better. I feel healthier, I’ve lost the unnecessary weight that I had accumulated from a unhealthy lifestyle, I feel like there’s no stopping me! Hands down The best feeling ever! I’ll be Hitting the grocery store in the AM so I’ll be posting some yummy recipes and pics within the week. Also, I’ll be in my favorite vacation spot so I’ll post additional reviews on the sage bistro! I talked about it in my earlier post it’s like the best vegan restaurant on the planet in Echo Park DTLA.. Anyways stay tuned 🙂 thanks for reading!

Hello All!! Happy Sunday! Today I just want to talk about how becoming a vegan is easier than you think. When people find out that I’m vegan I get the same questions “ It must be so hard for you to go out to dinner?” or “ what is it that you eat” ? Yes, beig vegan is not as convenient but more and more places are offering vegan friendly foods! My co-workers ordered Torchys tacos a few weeks ago and pre-vegan I would always order “ The Republican” for those of you who are not familiar with Torchys The Republican is a “GRILLED JALAPENO SAUSAGE, PICO DE GALLO AND FRESHLY GRATED CHEDDAR JACK CHEESE WITH POBLANO SAUCE ON A FLOUR TORTILLA” I will admit it was absolutely delicious 😋 but I have moved on to a different chapter in my life 😁. Which is great by the way! Anyways I’m looking at the menu and I see that you can build a taco bowl.. 🤔 i was so excited! I selected Rice, Black beans, Avocado, Pico, jalepenos, and Salsa! When the food was delivered all eyes were on my Vegan rice Bowl! Anyways my point is .. at most places you can create your own vegan meals, just ask questions and make sure that what you are ordering is truly vegan. Hi everyone! So Monday was my anniversary 💕😊 🤵🏾and I decided to make something new for dinner to celebrate the occasion😊. I decided on Stuffed Bell Peppers! Sounds good right! So growing up in New Orleans food was a big part of my life! Thats when all the family would get together and eat and laugh and dance.. but since I’ve moved away I really missed that! I missed my daddy’s yummy creole/Cajun spices! Anyways it made me think of my dads stuffed bell peppers which was my favorite as a kid! Well that and Mac and a cheese… Anyways.. He had the peppers stuffed with shrimp, crawfish, crab meat, dirty rice and sausage… 😋 but of course none of that is vegan 🙄 so I decided to try a different approach. I went to my nearest Market and purchased a bag of organic butternut squash pre-cut 🤫, jasmine rice(my fav), green onions, garlic, rotel, avocados and of course the yummy bell peppers and of course teriyaki sauce to tie it all in together. I decided on the yellow, red, and orange bell peppers I feel that they are more tasty! The green ones are good but a bit bitter in my opinion. Anyways Let me tell you!! this is my new favorite meal! I paired it with a side of lemon kale salad with dried cranberries. My fiancé loved it! So Yes!! He can be a picky eater so I was super excited about that! Everything blended so well and the flavor was on point! This is definitely a recipe to try! And one that I will be making again soon. So Stay tuned! I will be posting the recipe in a few 🙂

2 stems of Green onions, chopped
Desired amount of Guacamole
Refried Black beans
Place the chips on a plate, add the black refried beans and top with brown rice! Stack as you wish 😊
Top with fresh Guacamole and salsa
